Carmina is also looking at preparing her signature Baked Chicken Pesto, made more special with cream cheese, tomatoes and mozzarella, and Gambas al Ajillo, which she says is easy to cook and is perfect either as an appetizer or for the main course. It can be served with garlic bread or garlic rice.
